15-Minute Chicken Parmesan

A quick and easy Chicken Parmesan recipe that marries convenience with flavor, perfect for busy weeknights or last-minute gatherings.

  • 2 cups flour
  • 2 large eggs, lightly beaten
  • 1 cup panko breadcrumbs
  • 1 cup freshly grated Parmesan cheese
  • 6 boneless, skinless chicken breast halves
  • 3 tbsp olive oil
  • 2 cups chicken broth
  • 1 cup tomato sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Place the flour in a small bowl.
  2. Beat the eggs in another bowl.
  3. Combine panko breadcrumbs and grated Parmesan cheese in a third bowl.
  4. Pound the chicken breasts to about 1/2 inch thickness between two sheets of wax paper.
  5. Coat each chicken piece in flour, shaking off any excess.
  6. Dip the chicken into the beaten eggs, letting any excess egg drip off.
  7. Press the chicken into the panko mixture to coat both sides evenly.
  8. Heat olive oil in a large skillet over medium-high heat and sauté the chicken until lightly browned, about 3 minutes per side.
  9. Reduce the heat to low and pour in the chicken broth. Spread 3 tablespoons of tomato sauce on each breast.
  10. Top each piece with mozzarella and more grated Parmesan.
  11. Cover the skillet and let it simmer until the chicken is cooked through, about 6 minutes.

Notes

For added flavor, mix in some dried Italian herbs into your panko mixture. Serve with spaghetti or salad.
