  • 2 cups pancake mix
  • 1 cup milk
  • 2 large eggs
  • 1 cup flour
  • 2 tablespoons sugar

  • 1 cup mixed vegetables (bell peppers, spinach, etc.)
  • 1 cup cheese
  • 1 cup breakfast meats (bacon, sausage, etc.)
  • 1 cup fruits (bananas, berries, etc.)
  • 2 cups oats
  • 1 cup yogurt

Instructions

  1. Combine the dry pancake mix ingredients in a mixing bowl.
  2. Add milk and eggs to the mix and stir until the batter is smooth.
  3. Preheat your skillet over medium heat. Pour the batter to form pancakes and watch for bubbles on the surface before flipping; cook until golden brown on both sides.
  4. Whisk the eggs in a separate bowl and pour them into another skillet. Stir gently until they’re scrambled to perfection.
  5. Mix oats, milk, and yogurt in a container and refrigerate overnight for overnight oats.
  6. Assemble your breakfast bowls with layers of scrambled eggs, sautéed vegetables, and your choice of breakfast meats.
  7. Top everything off with sliced fruits or your favorite toppings for an added burst of flavor.

Notes

Leftover pancakes or breakfast bowls can be stored in airtight containers in the fridge for 3-4 days. Reheat pancakes in a toaster or skillet, and warm bowls in the microwave.
