Quick and delicious breakfast rolls packed with eggs, sausage, spinach, and cheese, perfect for busy mornings.

Ingredients

  • 4 large eggs
  • 1/2 lb sausage, cooked and crumbled
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. In a bowl, whisk the eggs and season with salt and pepper.
  3. Pour the egg mixture into the hot skillet and scramble until fully cooked.
  4. Add the crumbled sausage, chopped spinach, and feta cheese to the eggs, stirring to combine everything nicely.
  5. To make the tortillas flexible, warm them briefly in a dry skillet or in the microwave for about 10 seconds.
  6. Divide the egg and sausage mixture evenly among the tortillas.
  7. Sprinkle the shredded cheddar cheese on top of the filling.
  8. Roll the tortillas tightly, tucking in the sides as you go along.
  9. Serve warm, or wrap in foil for a great on-the-go breakfast!

Notes

For extra fluffy eggs, whisk them well before cooking. Avoid rushing the warming of the tortillas to prevent tearing.
