A quick and delicious Chicken Parmesan that’s perfect for busy weeknights.

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Italian-style breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Garlic powder to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Using a meat mallet, place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness.
  3. Season both sides generously with salt, pepper, and garlic powder.
  4. Set up three shallow dishes: one for flour, one for the beaten eggs, and one for the breadcrumb mixture combined with the grated Parmesan cheese.
  5. First, dip each chicken breast in the flour, shaking off any excess. Next, coat it in the egg mixture. Finally, press it into the breadcrumb mix, ensuring an even coating.
  6. Heat the olive oil in an oven-safe skillet over medium-high heat. Add the chicken and cook for 3-4 minutes on each side, until golden brown.
  7. Pour marinara sauce over each piece of chicken and sprinkle with mozzarella cheese.
  8. Transfer the skillet to the preheated oven and bake for 10-12 minutes or until the cheese is melty and bubbly.
  9. Serve hot, garnished with fresh basil if desired.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes.
