A quick and straightforward recipe for juicy, crispy breaded chicken cooked in an air fryer, perfect for weeknight dinners.

  • 2 boneless skinless chicken breasts (about 56 ounces each) or 4 thin-sliced chicken breasts
  • 2 cups seasoned parmesan breadcrumbs
  • 2 large eggs
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • Olive oil spray (non-aerosol)
  • Shredded parmesan cheese (for topping)
  • Lemon
  • Parsley
  • Red pepper flakes
  • Hot sauce

Instructions

  1. Slice each chicken breast in half lengthwise to make two pieces.
  2. Pat the chicken dry with a clean towel.
  3. If the chicken breasts are thick, pound them with a meat mallet for even cooking.
  4. In a shallow bowl, pour the seasoned breadcrumbs. In another bowl, crack the eggs and whisk them together with salt and pepper.
  5. Dip each chicken piece into the egg mixture, ensuring it’s fully coated.
  6. Transfer the chicken to the breadcrumbs, pressing gently to adhere the coating.
  7. Preheat your air fryer to 390°F (198°C) and spray the basket with olive oil to prevent sticking.
  8. Arrange the breaded chicken in a single layer in the air fryer basket. Lightly spray the tops with olive oil.
  9. Cook for 6-7 minutes, flip each piece, spray the other side with olive oil, and cook for an additional 4-5 minutes or until the internal temperature reaches 165°F (75°C).
  10. Allow the chicken to rest for at least five minutes before slicing.

Notes

For extra crunch, you can double dip the chicken in egg and breadcrumbs for a thicker coating. Store leftovers in an airtight container; they will last for 3-4 days.
