  • 2 large chicken breasts (boneless and skinless)
  • 1 zucchini (sliced into half-moons)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 cup broccoli florets
  • ½ red onion (sliced)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ¾ teaspoon sea salt
  • ½ teaspoon black pepper
  • Fresh parsley or cilantro (chopped)
  • Lemon wedges (for serving)

Instructions

  1. Trim any excess fat from the chicken breasts and pat them dry with a paper towel.
  2. In a bowl, rub the chicken with olive oil, garlic powder, paprika, oregano, thyme, sea salt, and black pepper until thoroughly coated.
  3. In another bowl, toss the zucchini, bell peppers, broccoli, and red onion with the remaining olive oil, salt, and pepper.
  4. Set your air fryer to 380°F (193°C) and preheat it for 5 minutes.
  5. Place the seasoned chicken breasts in the air fryer basket and cook for 10 minutes.
  6. After 10 minutes, add the seasoned vegetables around the chicken and cook for another 8-10 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  7. Make sure the chicken and vegetables are well-cooked.
  8. Allow the chicken to rest for a few minutes before serving. Garnish with fresh parsley or cilantro and serve with lemon wedges.

Notes

Don’t crowd the air fryer basket; give the chicken and vegetables enough space for even cooking. Consider marinating the chicken for a few hours before cooking to enhance the flavors.
