A healthier take on the classic Italian-American Chicken Parmesan, made in the air fryer for a crispy, cheesy, and satisfying meal without the extra oil.

Ingredients

Scale
  • 2 boneless (skinless) chicken breasts (about 8 ounces each)
  • ½ cup all-purpose flour
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 large eggs (lightly beaten)
  • ½ cup panko breadcrumbs
  • 2 tbsp grated Parmesan cheese
  • ½ cup marinara sauce
  • 6 tbsp reduced-fat mozzarella cheese

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Generously season the chicken breasts with salt and pepper on both sides.
  3. Set up a breading station: In the first bowl, combine flour with salt and pepper; the second bowl contains the beaten eggs; the third bowl is a mixture of panko breadcrumbs and grated Parmesan cheese.
  4. Dredge each chicken breast in the flour mixture until fully coated.
  5. Dip the floured chicken into the egg wash, allowing excess to drip off.
  6. Coat the chicken in the panko and Parmesan mixture, pressing gently so it sticks.
  7. Place the breaded chicken breasts in a single layer in the air fryer basket.
  8. Air fry for about 6 minutes on each side, or until golden brown and the internal temperature reaches 165°F (74°C).
  9. While the chicken cooks, warm the marinara sauce in a small pot.
  10. Once cooked, remove the chicken from the air fryer, top with marinara and mozzarella cheese.
  11. Return to the air fryer and cook for an additional 2-3 minutes, until the cheese is melted and bubbly.
  12. Serve immediately with a side of pasta, vegetables, or your favorite dipping sauce.

Notes

For an extra crunch, consider adding some Italian seasoning to your breadcrumb mixture.
