Delicious and customizable breakfast burritos filled with fluffy scrambled eggs, savory sausage or bacon, and colorful veggies, all wrapped in a warm tortilla.

Ingredients

  • 4 large eggs
  • 4 flour tortillas
  • 1 cup shredded cheese
  • 1 cup cooked and crumbled sausage or bacon
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/4 cup salsa
  • Salt and pepper to taste
  • Fresh cilantro (optional)

Instructions

  1. In a skillet over medium heat, sauté the diced bell peppers and onions until they’re soft.
  2. In a separate bowl, whisk the large eggs with salt and pepper. Pour them into the skillet with the veggies, and scramble until fully cooked.
  3. Lay the tortillas flat on a clean surface. Divide the scrambled egg mixture evenly among the tortillas.
  4. Add cooked sausage or bacon on top of the egg mixture, followed by a generous sprinkle of shredded cheese and a spoonful of salsa.
  5. Roll the tortillas tightly into burritos, folding in the ends to keep the filling secure.
  6. For extra flavor and crunch, grill each burrito in the skillet until they turn golden brown. Serve warm, garnished with fresh cilantro if desired.

Notes

Storing leftovers is easy! Place any unused burritos in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze them for up to a month.
