Soft and chewy cookies infused with the warm flavors of apple and cinnamon, perfect for cozy autumn days.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup chopped apples (peeled and cored)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, combine the flour, baking soda, ground cinnamon, and salt; gradually add this to the wet mixture until just combined.
  5. Fold in the chopped apples and nuts, if using.
  6. Drop rounded tablespoons of dough onto ungreased cookie sheets, leaving space between each.
  7. Bake for 10-12 minutes, or until golden brown around the edges.
  8. Allow to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

For added flavor, use freshly grated cinnamon. Store cookies in an airtight container for up to a week.
