A delightful baked dish combining creamy cottage cheese, warm cinnamon, and sweet apples, perfect for breakfast or a snack.

  • 2 cups cottage cheese
  • 3 large eggs
  • 1 large apple, peeled and finely diced
  • 1/2 cup rolled oats or almond flour
  • 1/4 cup maple syrup or honey
  • 1 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
  2. Whisk together the cottage cheese, eggs, maple syrup, and vanilla extract until well combined.
  3. Stir in the rolled oats or almond flour, ground cinnamon, and baking powder until evenly mixed.
  4. Gently fold in the diced apple, ensuring it’s well distributed throughout the mixture.
  5. Pour the mixture into the greased baking dish, spreading it out evenly.
  6. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Allow to cool slightly before slicing into squares and serving.

Notes

For a gluten-free version, swap rolled oats with almond flour. Drizzle with extra maple syrup or honey for added sweetness.
