Fluffy pancakes combining the sweetness of apples with the creamy tang of yogurt, perfect for any breakfast.

  • 1 cup all-purpose flour
  • 1/2 cup plain yogurt (Greek or regular)
  • 1 cup milk
  • 1 large apple, grated (preferably Fuji or Honeycrisp)
  • 1 large egg
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon vegetable oil (plus more for cooking)
  • Optional: Chopped nuts or raisins

Instructions

  1. In a bowl, combine the flour, baking powder, cinnamon, and salt. Whisk well until evenly mixed.
  2. In a separate bowl, combine the yogurt, milk, egg, sugar, and vegetable oil. Whisk until the mixture is smooth and homogenous.
  3. Stir the grated apple into the wet mixture until evenly distributed.
  4. Gradually add the wet mixture to the dry ingredients. Stir gently until just combined—being careful not to overmix.
  5. Preheat a skillet or frying pan over medium heat, lightly greasing it with oil.
  6. Pour about 1/4 cup of batter for each pancake into the skillet. Cook until bubbles form on the surface, approximately 2-3 minutes.
  7. Once bubbles appear, flip the pancakes over and cook for another 2-3 minutes, or until golden brown on the other side.
  8. Place the cooked pancakes on a plate and cover them with a towel to keep warm while you finish making the rest.

Notes

For extra flavor, consider adding vanilla extract or using alternative fruits like mashed bananas or blueberries.
