  • 1 ripe avocado
  • Smoked salmon
  • 2 eggs
  • Furikake seasoning
  • Salt and pepper (optional)
  • Fresh herbs (such as dill or chives, optional)

Instructions

  1. Toast the slices of sourdough bread until golden and crisp.
  2. Mash the ripe avocado in a bowl and season lightly with salt and pepper if desired.
  3. Spread the mashed avocado generously on each slice of toasted sourdough.
  4. Layer the smoked salmon over the avocado.
  5. Poach the eggs to your preferred doneness and place them atop the salmon.
  6. Sprinkle furikake seasoning over the top before serving.

Notes

For variations, swap smoked salmon with crispy bacon or sautéed mushrooms. Vegan options can use chickpea salad instead of eggs.
