Avocado Toast with Smoked Salmon

A delightful dish featuring creamy avocados and rich smoked salmon atop toasted bread, perfect for any meal.

Ingredients

  • 2 Avocados
  • 4 thick slices of bread (sourdough, multigrain, or olive bread)
  • 4 oz smoked salmon
  • 1/3 cup crème fraîche
  • 1 tbsp fresh lemon juice
  • Zest from one lemon
  • 1 tbsp chopped fresh dill
  • 2 spring onions/scallions
  • 2 tbsp capers (chopped)
  • 2 tbsp extra-virgin olive oil (to brush the bread for grilling)
  • A pinch of kosher salt or sea salt flakes
  • A pinch of freshly ground black pepper

Instructions

  1. Brush both sides of each bread slice with extra-virgin olive oil.
  2. Grill the bread in a skillet, grill pan, or cast iron pan over medium-high heat for 2-3 minutes on each side, until it’s toasted and golden brown.
  3. In a bowl, combine the crème fraîche, lemon juice, lemon zest, chopped dill, spring onions, and chopped capers. Season with a pinch of salt and pepper to taste.
  4. Prepare your assembly area with the freshly toasted bread, slices of smoked salmon, and the lemon-herb crème fraîche mixture.
  5. Mash the avocados in a bowl and spread them generously over the warm toasted bread.
  6. Drape the smoked salmon on top of the avocado.
  7. Finish off your creation with a dollop of the lemon-capers-herb crème fraîche.

Notes

To enhance flavor, garnish with additional dill or lemon wedges. Serve with a light salad for a complete meal.
