2 Avocados
4 thick slices of bread (sourdough, multigrain, or olive bread)
4 oz smoked salmon
1/3 cup crème fraîche
1 tbsp fresh lemon juice
Zest from one lemon
1 tbsp chopped fresh dill
2 spring onions/scallions
2 tbsp capers (chopped)
2 tbsp extra-virgin olive oil (to brush the bread for grilling)
A pinch of kosher salt or sea salt flakes
A pinch of freshly ground black pepper
Instructions
Brush both sides of each bread slice with extra-virgin olive oil.
Grill the bread in a skillet, grill pan, or cast iron pan over medium-high heat for 2-3 minutes on each side, until it’s toasted and golden brown.
In a bowl, combine the crème fraîche, lemon juice, lemon zest, chopped dill, spring onions, and chopped capers. Season with a pinch of salt and pepper to taste.
Prepare your assembly area with the freshly toasted bread, slices of smoked salmon, and the lemon-herb crème fraîche mixture.
Mash the avocados in a bowl and spread them generously over the warm toasted bread.
Drape the smoked salmon on top of the avocado.
Finish off your creation with a dollop of the lemon-capers-herb crème fraîche.
Notes
To enhance flavor, garnish with additional dill or lemon wedges. Serve with a light salad for a complete meal.
