A quick, melty breakfast quesadilla filled with scrambled eggs, crispy bacon, and gooey cheese, perfect for busy mornings.

Ingredients

  • 2 large eggs
  • 1/4 cup shredded cheese (cheddar or your choice)
  • 2 strips of cooked bacon, chopped
  • 1 large flour tortilla
  • Salt and pepper to taste
  • Butter or oil for cooking

Instructions

  1. Whisk eggs with a pinch of salt and pepper in a small bowl.
  2. Heat a nonstick skillet over medium. Pour in the eggs and gently stir until they’re softly scrambled and fully cooked; remove from heat.
  3. Lay the tortilla flat. On one half, place the scrambled eggs, sprinkle the chopped bacon, and top with shredded cheese.
  4. Fold the tortilla over the filling and press lightly. Add a teaspoon of butter or a splash of oil to the skillet and return it to medium heat.
  5. Cook the folded quesadilla 2–3 minutes per side, until each side is golden-brown and the cheese is melted.
  6. Transfer to a cutting board, slice into wedges, and serve immediately.

Notes

Serve plain or with fresh fruit and a crisp salad. Toppings such as salsa, guacamole, or chipotle mayo enhance the flavor.
