Delicious breakfast quesadillas filled with crispy bacon, fluffy scrambled eggs, and melted cheddar cheese in a golden tortilla.

Ingredients

  • 4 large flour tortillas
  • 6 slices of bacon
  • 4 large eggs
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 tablespoon butter
  • Optional: hot sauce, chopped green onions, or fresh cilantro for garnish

Instructions

  1. Heat a large skillet over medium heat.
  2. Cook the bacon until crispy, about 5–7 minutes. Drain on a paper towel and crumble.
  3. In a medium bowl, whisk together the eggs with a pinch of salt and pepper.
  4. In the same skillet, melt the butter and scramble the eggs until just set, about 2 minutes.
  5. Lay a tortilla flat, add a fourth of the cheese, some scrambled eggs, and crumbled bacon to one half.
  6. Fold the tortilla over to create a half-moon shape.
  7. Cook the quesadilla in the skillet for 2–3 minutes on each side until golden brown and the cheese is melted.
  8. Allow to cool slightly, cut into sections, and garnish with optional toppings before serving.

Notes

Consider swapping flour tortillas for whole wheat or corn, and using different cheeses to customize your quesadilla.
