Bacon, Egg, and Cheese Breakfast Quesadillas

Quick and delicious breakfast quesadillas filled with crispy bacon, fluffy eggs, and melted cheese, perfect for busy mornings or leisurely brunch.

  • 1 (8-inch) flour tortilla
  • 2 slices cooked bacon, chopped and divided
  • 2 large eggs
  • 1/3 cup shredded cheddar cheese, divided
  • Salt and pepper, to taste
  • 1 teaspoon butter (optional, for cooking)

Instructions

  1. In a small bowl, whisk the eggs with salt and pepper until combined.
  2. Heat a nonstick frying pan over medium-low heat. If desired, add butter for a richer flavor.
  3. Pour in the whisked eggs, swirling to cover the pan evenly. Cook until the edges begin to set, but the center remains slightly soft.
  4. Sprinkle half of the cooked bacon and half of the shredded cheese over the eggs. Place the tortilla on top, pressing gently to adhere.
  5. Carefully flip the eggs and tortilla together, keeping the tortilla on the bottom.
  6. Add the remaining bacon and cheese on top of the eggs. Fold the tortilla in half to create a quesadilla.
  7. Cook for 1-2 minutes on each side until the tortilla is golden brown and the cheese is melted.
  8. Remove from the pan, slice into wedges, and serve warm.

Notes

Serve with fresh salsa or guacamole, and pair with a green smoothie or coffee.
