A comforting dish combining creamy eggs, crispy bacon, and tender potatoes, perfect for breakfast or brunch.

  • 6 large eggs
  • 1/2 cup milk
  • 2 medium potatoes, peeled and diced
  • 4 slices of bacon, chopped
  • 1/2 cup onion, chopped
  • Salt and pepper, to taste
  • 1 cup shredded cheese (optional)
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the bacon over medium heat until crispy. Remove bacon and set aside.
  3. Add the peeled and diced potatoes and chopped onions to the drippings. Sauté until tender.
  4. Whisk together the eggs, milk, salt, and pepper in a bowl.
  5. Fold the bacon, potatoes, and onions into the egg mixture.
  6. Pour the mixture back into the skillet and cook on the stovetop until edges begin to set.
  7. Sprinkle cheese on top if using, then transfer to the oven.
  8. Bake for 15-20 minutes, or until the frittata is fully set.
  9. Cool slightly before slicing. Garnish with fresh herbs and serve.

Notes

Store leftovers in an airtight container in the fridge for up to four days. Reheat in the microwave or oven.
