A comforting Italian-American dish featuring tender chicken breasts coated in a crunchy Panko crust, topped with marinara sauce and melted mozzarella.

  • 1 cup Panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 eggs, lightly beaten
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil (optional, for garnish)
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with a wire rack for optimal crispiness.
  2. Pound the chicken breasts to an even thickness for uniform cooking.
  3. Set up three bowls: one with flour, one with the beaten eggs, and a third mixing Panko, Parmesan, Italian seasoning, and garlic powder.
  4. Dredge each chicken piece first in flour, dip it in the egg, and then coat it thoroughly in the breadcrumb mix.
  5. Arrange the coated chicken on the wire rack, allowing air to circulate, and drizzle with olive oil.
  6. Bake for 18-20 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Pull from the oven and spoon marinara sauce over each piece. Sprinkle generously with mozzarella before returning to the oven for an additional 5 minutes until bubbly and golden.
  8. Garnish with fresh basil before serving hot.

Notes

For best results, avoid overcooking by using a meat thermometer. You can also experiment with different sauces or vegetable substitutes for a variation.
