A comforting and healthier version of Chicken Parmesan, baked to perfection with a crispy coating, marinara sauce, and melted mozzarella.

  • ½ cup whole wheat flour
  • 3 large eggs
  • 1.5 cups shredded mozzarella
  • 1.5 cups marinara sauce
  • 1 cup whole wheat bread crumbs

  • ¼ teaspoon pepper
  • 2 teaspoons dried basil
  • 2 teaspoons dried parsley

Instructions

  1. Prep the Chicken: Slice the chicken breasts in half lengthwise. Place each piece between plastic wrap and pound them to about ¼ inch thick.
  2. Preheat Your Oven: Set your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.
  3. Set Up Coating Bowls: In a bowl, add the whole wheat flour. In a second bowl, whisk the eggs. In a third bowl, combine the breadcrumbs, Parmesan cheese, pepper, dried basil, and dried parsley.
  4. Bread the Chicken: Coat each chicken cutlet in the flour, dip it into the egg mixture, and then dredge it in the breadcrumb mixture, ensuring an even coating.
  5. Bake the Chicken: Place the breaded chicken on the prepared baking sheet. Bake for about 30 minutes, flipping the pieces halfway through for an even crisp.
