Crispy and savory baked chicken taquitos that are easy to make and perfect for any occasion.

Ingredients

  • 2 cups shredded chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 810 corn or flour tortillas
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil spray
  • Sour cream or salsa for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the shredded chicken, cheese, cumin, garlic powder, onion powder, salt, and pepper.
  3. Warm the tortillas slightly in the microwave or on a skillet to make them pliable.
  4. Take a few tablespoons of the chicken mixture and place it on each tortilla. Roll it tightly from one end to the other.
  5. Arrange the rolled taquitos seam-side down on a baking sheet lined with parchment paper.
  6. Lightly spray the taquitos with olive oil to help them crisp up.
  7. Bake for 20-25 minutes, or until golden and crispy.
  8. Serve hot with sour cream or salsa!

Notes

To keep tortillas from tearing, warm them before rolling. Use airtight containers for leftovers.
