A simple and nutritious dish combining protein-packed cottage cheese, veggies, and eggs, perfect for breakfast, brunch, or dinner.

  • 1 cup Cottage Cheese
  • 4 large Eggs
  • 1/2 cup Parmesan Cheese
  • 2 tablespoons Fresh Chives
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • Salt to taste
  • Pepper to taste
  • 1 cup Bell Peppers, chopped
  • 1 cup Spinach
  • 1/2 cup Sun-Dried Tomatoes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the cottage cheese, eggs, Parmesan cheese, chives, garlic powder, paprika, salt, and pepper. Mix well until everything is thoroughly blended.
  3. Gently stir in the bell peppers, spinach, and sun-dried tomatoes until they are evenly distributed throughout the mixture.
  4. Pour the mixture into a greased baking dish, spreading it out evenly for uniform cooking.
  5. Bake in the preheated oven for 25-30 minutes or until the edges are slightly browned and the center has set.
