A creamy and flavorful baked chicken dish, perfect for weeknight dinners or impressing guests with minimal effort.

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 clove garlic (minced)
  • 1/2 cup chicken broth
  • 8 oz cream cheese (softened)
  • 1 tbsp fresh chives (chopped)
  • 1 tsp paprika
  • Salt and pepper (to taste)
  • 1/2 cup shredded sharp cheddar cheese (optional, for topping)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray or olive oil.
  2. Season the chicken breasts generously on both sides with salt, pepper, and paprika.
  3. Heat the olive oil in a skillet over medium heat. Sear the chicken for 2-3 minutes on each side until golden brown. Once done, remove the chicken from the skillet and set aside.
  4. Add the minced garlic to the same skillet. Cook for about 30 seconds until fragrant.
  5. Stir in the chicken broth and let it simmer for 1-2 minutes to reduce slightly.
  6. Mix in the softened cream cheese and stir until it becomes smooth. Add fresh chives and season with additional salt and pepper to taste.
  7. Place the seared chicken breasts in the prepared baking dish and pour the cream cheese mixture over them. If desired, sprinkle shredded cheddar cheese on top for extra flavor.
  8. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). For a golden topping, switch to the broil setting for the last 2-3 minutes.
  9. Garnish with fresh parsley before serving warm with your favorite side dishes.

Notes

For a lighter option, consider using Greek yogurt instead of cream cheese. Don’t skip the searing step for enhanced flavor.
