A vibrant and simple dish featuring roasted tomatoes, creamy feta, and fresh spinach, perfect for any meal.

  • 200g feta cheese
  • 4 eggs
  • 1 cup cherry tomatoes
  • 2 cups fresh spinach
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, add the cherry tomatoes and drizzle with olive oil.
  3. Crumble the feta cheese over the tomatoes. Place the dish in the oven for 15 minutes.
  4. After 15 minutes, carefully remove the dish from the oven and gently crack the eggs into the baking dish.
  5. Add the fresh spinach around the eggs.
  6. Season the dish with salt and pepper.
  7. Return the dish to the oven, baking for an additional 10-12 minutes, or until the eggs are set to your liking.
  8. If desired, garnish with fresh herbs and serve hot.

Notes

If feta cheese isn’t available, you can substitute it with goat cheese for a different flavor profile.
