  • 1 cup cherry tomatoes
  • 1 cup fresh spinach
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a baking dish by placing the cherry tomatoes at the bottom. Add a generous drizzle of olive oil, then sprinkle with salt and pepper.
  3. Crumble the feta cheese evenly over the tomatoes, letting it nestle among them.
  4. Transfer the dish to the oven and bake for about 15 minutes, or until the tomatoes are soft and the feta has a slightly golden hue.
  5. Remove the dish from the oven, and add the fresh spinach. Make two small wells in the mixture and crack an egg into each well.
