  • 1 tbsp Montreal chicken seasoning blend
  • 2 tbsp butter
  • 1/2 cup red onion, minced
  • 1/2 cup flat leaf parsley, chopped
  • 1 tbsp garlic, minced
  • 1/2 tsp red pepper flakes
  • 1 cup chicken stock
  • 1 tbsp fresh lemon juice
  • 1 cup freshly grated Parmesan cheese
  • 1/3 cup heavy whipping cream

Instructions

  1. Melt the butter in a skillet over medium heat.
  2. Sauté the minced onions until fragrant, about 2 minutes.
  3. Add the chopped parsley, minced garlic, lemon juice, and red pepper flakes to the skillet.
  4. Pour in the chicken stock and sprinkle the Parmesan cheese; mix thoroughly before adding the heavy cream.
  5. Bring the sauce to a gentle simmer for 1 minute, then turn off the heat.
  6. Season the chicken pieces with kosher salt, smoked paprika, and your chosen seasoning blend.
  7. Transfer the chicken into a baking dish and pour the sauce over it to coat the pieces beautifully.
  8. Bake uncovered at 375°F for 1 hour and 45 minutes, flipping the chicken halfway through for even cooking.
  9. Finish by broiling the chicken on the skin side until it’s golden brown, basting it in the delicious sauce before serving.
