A quick and budget-friendly family favorite, this crispy Parmesan crusted chicken is juicy on the inside and satisfying on the outside.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup Panko breadcrumbs
  • 1 cup freshly grated Parmesan cheese
  • 1 1/2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • Olive oil or non-stick cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper and spray it with oil.
  3. Set up three shallow dishes: one with flour, one with beaten eggs, and the last with Panko, Parmesan, Italian seasoning, garlic powder, salt, and pepper.
  4. Dredge each chicken breast in the flour, shaking off excess.
  5. Dip the floured chicken into the beaten eggs, letting excess drip off.
  6. Coat the chicken in the breadcrumb mixture, pressing down to adhere.
  7. Arrange the breaded chicken on the prepared baking sheet and spray the tops with oil.
  8. Bake for 18-22 minutes, or until the chicken reaches 165°F and the crust is crispy.
  9. Allow the chicken to rest for 5 minutes before serving.

Notes

For a gluten-free option, substitute almond flour and gluten-free breadcrumbs. Letting the chicken rest helps keep it moist.
