A flavorful chicken dish with balsamic glaze and gooey mozzarella.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. Season both sides of the chicken breasts with salt and pepper.
  3. In a small bowl, whisk together balsamic vinegar, honey or maple syrup, basil, oregano, and minced garlic to create the balsamic sauce.
  4. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the chicken for 2 to 3 minutes on each side until golden brown.
  5. Place the seared chicken in your prepared baking dish. Pour the balsamic sauce over the chicken and scatter halved cherry tomatoes around it.
  6. Bake in the oven for 20 to 25 minutes, until the chicken is nearly cooked through.
  7. Remove the dish from the oven, sprinkle mozzarella over each breast, and return to bake for an additional 5 to 10 minutes until the cheese is bubbly.
  8. Garnish with fresh basil or parsley if desired, and serve warm.

Notes

For a vegan option, substitute honey with maple syrup and mozzarella with dairy-free cheese.
