A delightful recipe for tender chicken breasts marinated in a flavorful blend of balsamic vinegar, olive oil, honey, and aromatic herbs.

  • 4 boneless skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 3 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper (to taste)
  • Fresh basil leaves (for garnish, optional)

Instructions

  1. In a medium-sized mixing bowl, whisk together balsamic vinegar, olive oil, honey, minced garlic, dried oregano, and dried thyme until well blended.
  2. Season the marinade with salt and pepper.
  3. Place the chicken breasts in a resealable plastic bag or shallow dish, pouring the marinade over them to coat well. Seal or cover and let marinate in the refrigerator for at least 30 minutes, or optimally 2 to 4 hours.
  4. Preheat your oven to 400°F (200°C).
  5. Take the chicken out of the fridge and allow it to sit at room temperature for 10-15 minutes before cooking.
  6. Prepare a baking dish by lining it with aluminum foil or parchment paper, then lightly grease with olive oil.
  7. Arrange the chicken breasts in the dish, allowing any leftover marinade to drizzle over them.
  8. Bake in the preheated oven for 25-30 minutes, until the chicken reaches an internal temperature of 165°F (75°C).
  9. Once cooked, let the chicken rest for about 5-10 minutes before slicing.
  10. Serve the chicken on a platter drizzled with pan juices and garnish with fresh basil if desired.

Notes

For maximum flavor, marinate overnight. This recipe is gluten-free and can easily be adapted with various herbs and spices.
