Delicious and wholesome Banana Oatmeal Bars made with ripe bananas and rolled oats, perfect for busy mornings or as a nutritious snack.

  • ½ cup nut butter
  • 2 cups rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • 1 cup chocolate chips
  • ½ teaspoon salt

Instructions

  1. Preheat the Oven: Heat your oven to 350°F (175°C) and line a 9×9 inch baking pan with parchment paper.
  2. Combine Ingredients: In a large mixing bowl, mix together the mashed bananas, nut butter, rolled oats, cinnamon, vanilla extract, maple syrup, chocolate chips, and salt. Stir until everything is well combined.
  3. Pour and Spread: Transfer the mixture into the lined baking pan. Spread it out evenly, pressing it down gently. If you want, sprinkle a few extra chocolate chips on top for an extra treat.
  4. Bake: Place the pan in the oven and bake for 18 to 20 minutes. The edges should be golden, and the texture will feel firm when done.
  5. Cool and Cut: Once baked, let the bars cool completely in the pan before cutting them into squares.

Use overripe bananas for the best flavor. Store in an airtight container for up to 5 days, or freeze for up to 3 months.
