Delicious and nutritious Banana Oatmeal Muffins, perfect for breakfast or a snack.

  • 2 ripe bananas
  • 1 cup whole grain oats
  • 1/4 cup maple syrup (optional)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon (optional)
  • 1/2 cup milk (or non-dairy alternative)
  • 1/4 cup vegetable oil (or melted coconut oil)
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips or blueberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners.
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Add the oats, maple syrup (if using), baking powder, baking soda, salt, and cinnamon to the mashed bananas. Mix until well combined.
  4. Pour in the milk, vegetable oil, and vanilla extract. Stir until smooth.
  5. Fold in chocolate chips or blueberries if desired.
  6. Distribute the batter among the muffin cups, filling each about 2/3 full.
  7. Bake for 15-20 minutes, or until a toothpick comes out clean.
  8. Cool in the tin for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to three days, or refrigerate for a week. Can be frozen for up to three months.
