Delightful banana pancakes that are fluffy and naturally sweet, perfect for breakfast or brunch.

  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 ripe banana, mashed
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Combine the all-purpose flour, brown sugar, baking powder, baking soda, and salt in a medium bowl.
  2. Whisk together the buttermilk, mashed banana, egg, melted butter, and vanilla extract in another bowl until smooth.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  4. Preheat a skillet over medium heat and lightly grease it.
  5. Pour batter onto the skillet to form pancakes; cook until bubbles appear, then flip and cook until golden brown.

Notes

For a healthier twist, substitute whole wheat flour or almond milk for buttermilk.
