A delightful one-bowl meal featuring tender chicken, crisp vegetables, and a spicy, creamy sauce.

  • 1 lb chicken breast, diced
  • 2 cups cooked rice
  • 1 cup broccoli florets
  • 1 red bell pepper, diced
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Combine the mayonnaise, sweet chili sauce, sriracha, and soy sauce in a mixing bowl. Stir until well blended.
  2. Season the diced chicken with salt and pepper.
  3. Heat a pan over medium heat and add the chicken. Cook for about 6-8 minutes, until golden brown and cooked through.
  4. Add the broccoli and red bell pepper to the pan, cooking until slightly tender (around 3-4 minutes).
  5. Pour the spicy sauce over the cooked chicken and vegetables. Toss everything together until well combined and heated through.
  6. Serve the mixture over cooked rice, garnishing with chopped green onions.

Notes

Feel free to adjust the level of spice by varying the amount of sriracha. Add sesame seeds or chopped peanuts for extra crunch.
