Crispy and flavorful breakfast potatoes with bacon and maple syrup, perfect for brunch or quick weekday meals.

  • 4 medium golden potatoes (or sweet potatoes)
  • 2 tablespoons olive oil (or avocado oil)
  • 4 slices bacon
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Old Bay seasoning
  • 2 cloves garlic (minced)
  • 2 tablespoons pure maple syrup
  • 1 tablespoon parsley (or chives, chopped)

Instructions

  1. Cook the bacon in a large skillet over medium heat until crispy. Set aside, leaving the drippings in the pan.
  2. Cut the potatoes into bite-sized chunks for uniform cooking.
  3. Add olive oil to the skillet and increase the heat to medium-high.
  4. Once the oil is hot, add the potatoes and season with salt, pepper, and Old Bay seasoning.
  5. Cook for about 10-15 minutes, stirring occasionally until golden brown and tender.
  6. When the potatoes are nearly done, add the minced garlic, cooking for an additional 1-2 minutes until fragrant.
  7. Crumble cooked bacon over the potatoes and drizzle with maple syrup before serving.
  8. Sprinkle with chopped parsley or chives for a fresh finish.

Notes

For a vegetarian option, substitute bacon with turkey bacon or omit it altogether. Feel free to add diced bell peppers or jalapeños for extra flavor.
