Quick and nutritious pancake bites packed with protein and juicy berries, perfect for busy mornings or family brunches.

Ingredients

  • 1 cup rolled oats
  • 1 scoop protein powder
  • 1 cup cottage cheese (or Greek yogurt)
  • 2 eggs
  • 1/2 cup mixed berries (fresh or frozen)
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin.
  2. Blend together the rolled oats, protein powder, cottage cheese, eggs, honey (if using), vanilla extract, baking powder, and a pinch of salt until smooth in a large mixing bowl.
  3. Fold in the mixed berries gently, taking care not to break them apart too much.
  4. Pour the batter into the prepared muffin tin, filling each cup about two-thirds full.
  5. Bake for 15-20 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
  6. Allow to cool slightly before removing from the tin. Enjoy warm or store in the fridge for quick snacks!

Notes

For added flavor, experiment with spices like cinnamon or nutmeg. You can also try different fruits based on your preferences.
