Delicious and healthy pancake bites packed with protein and berries, perfect for quick breakfasts!

Ingredients

  • 1/2 cup cottage cheese
  • 2 eggs
  • 1 cup berries (blueberries, raspberries, or strawberries)
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a muffin tin to prevent sticking.
  2. Combine oats, cottage cheese, eggs, honey (if using), baking powder, vanilla extract, and salt in a blender or food processor.
  3. Blend until you achieve a smooth mixture.
  4. Fold in the berries gently to keep them whole.
  5. Pour the batter into the muffin tin, filling each cup about two-thirds full.
  6. Bake for 15-20 minutes until the tops are golden and a toothpick comes out clean.
  7. Let cool slightly before removing from the tin. Enjoy your quick and healthy breakfast!
