A hearty, nourishing classic chicken noodle soup filled with tender chicken, wholesome vegetables, and cozy egg noodles in a deliciously seasoned broth.

  • 2 cups cooked chicken, shredded
  • 1 cup egg noodles
  • 4 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onions, sliced carrots, and celery. Sauté until the vegetables soften, about 5 minutes.
  3. Stir in the minced garlic and dried thyme. Cook for 1 more minute until fragrant.
  4. Pour in the chicken broth and bring it to a gentle boil.
  5. Add the egg noodles and cook according to package instructions (usually around 7-8 minutes).
  6. Gently stir in the shredded chicken and season with salt and pepper to taste.
  7. Let the soup simmer for about 5 minutes until everything is nicely heated through.
  8. Serve hot in bowls, garnished with freshly chopped parsley.

Notes

Feel free to substitute rotisserie chicken or use gluten-free noodles if preferred. For a heartier version, add more vegetables like peas or corn.
