A classic comfort dish of crispy chicken breasts topped with marinara and gooey mozzarella, perfect for family dinners or meal prepping.

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 2 eggs
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts generously with salt and pepper.
  3. Beat the eggs in a medium bowl until well mixed.
  4. Combine the breadcrumbs and grated Parmesan cheese in another bowl.
  5. Dip each chicken breast into the beaten eggs, coating thoroughly.
  6. Roll each chicken breast in the breadcrumb mixture until fully covered.
  7. Heat olive oil in a skillet over medium heat and fry the chicken for about 4-5 minutes on each side until golden brown.
  8. Place the chicken in a baking dish, pour marinara sauce over it, and sprinkle shredded mozzarella on top.
  9. Bake for approximately 20 minutes until the cheese is bubbly and the chicken is cooked through.
  10. Garnish with fresh basil before serving, if desired.

Notes

For a twist, use pesto instead of marinara or whole wheat breadcrumbs for a healthier option.
