A hearty breakfast casserole featuring ground beef, bacon, creamy cheeses, and fluffy eggs, perfect for family brunches and holiday gatherings.

  • 1 pound (450g) ground beef
  • 1 pound (450g) bacon, chopped
  • 4 ounces (113g) cream cheese, softened
  • ½ cup (120g) sour cream
  • 1 cup (240ml) whole milk
  • 8 large eggs
  • 2 cups (200g) shredded cheddar cheese, divided
  • 1 (30-ounce/850g) bag frozen shredded hash browns, thawed and drained
  • 1 (1-ounce/28g) packet dry ranch seasoning mix
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. In a skillet over medium heat, cook the ground beef and bacon until browned and crispy. Drain excess grease.
  2. In a large bowl, combine softened cream cheese, sour cream, and whole milk. Beat until smooth. Add in the ranch seasoning mix, onion powder, garlic powder, salt, and pepper, stirring until well incorporated.
  3. In a separate bowl, lightly beat the eggs. Pour the beaten eggs into the creamy cheese mixture and gently fold in 1 cup of shredded cheddar cheese.
  4. Spread the thawed and drained hash browns evenly in a greased 9×13-inch baking dish. Crumble half of the cooked ground beef and half of the bacon over the hash browns.
  5. Pour the creamy egg mixture evenly over the hash browns and meat. Sprinkle the remaining ground beef and bacon on top, and generously top with the remaining 1 cup of shredded cheddar cheese.
  6. Place the casserole in a preheated oven at 350°F (175°C) for 45 to 55 minutes, or until set, puffed, and golden brown.
  7. Let the casserole rest for 10 to 15 minutes before slicing and serving.

Notes

Use a non-stick baking dish to ensure easy release, and let the cooked meat cool before mixing to prevent curdling. Consider adding extra cheese for flavor!
