A comforting and nostalgic Italian dish featuring crispy chicken breasts topped with marinara sauce and melty cheese.

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups breadcrumbs (preferably Italian-style)
  • 1 cup marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • Fresh basil or parsley, for garnish
  • Olive oil or cooking spray, for frying

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a baking dish with olive oil or cooking spray.
  2. Place the chicken breasts between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound them to an even thickness for uniform cooking.
  3. Season both sides of the chicken with salt and black pepper.
  4. Set up your assembly line: one bowl with flour, a second with beaten eggs, and a third with breadcrumbs mixed with dried oregano and garlic powder.
  5. Dredge each chicken breast in flour, dip it in the beaten eggs, and then coat it thoroughly with the breadcrumb mixture.
  6. Heat olive oil in a large skillet over medium heat. Cook the chicken for 5-6 minutes on each side until golden brown.
  7. Arrange the cooked chicken breasts in the greased baking dish, spoon marinara sauce over each piece, and sprinkle with shredded mozzarella and grated Parmesan cheese.
  8. Bake in the oven for about 20 minutes until the cheese is bubbly and golden.
  9. Allow to rest for 10 minutes before serving, garnishing with fresh basil or parsley.
