A delightful blend of textures and flavors in a healthy chicken salad, perfect for lunch or a light dinner.

Ingredients

  • 2.5 cups cooked, diced or shredded chicken
  • 3 stalks of celery – about 1/2 cup diced
  • 1 cup sliced grapes
  • 1/3 cup chopped pecans
  • 1/3 cup chopped red onion
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayo
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon juice
  • 12 teaspoons fresh lemon zest
  • Salt and pepper – to taste

Instructions

  1. Prepare the grapes: place them in a bowl of water mixed with 1 teaspoon of baking soda. Allow them to soak for about 5 minutes, then rinse well and pat dry before slicing.
  2. In a medium-sized bowl, mix together the sliced grapes, diced chicken, celery, chopped pecans, and red onion.
  3. In a separate small bowl, combine Greek yogurt, mayo, Dijon mustard, lemon juice, and lemon zest. Add salt and pepper to taste.
  4. Pour the dressing over the chicken and grape mixture. Toss everything gently until well coated.
  5. Serve immediately or refrigerate for a couple of hours to let the flavors meld.

Notes

This salad can be stored in an airtight container in the fridge for up to 3 days.
