A quick and easy keto-friendly crockpot chicken recipe, featuring tender chicken thighs in a creamy sauce.

  • 2 pounds bone-in, skin-on chicken thighs
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 4 ounces cream cheese, softened and cubed
  • 2 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional add-ins: spinach, sun-dried tomatoes, or mushrooms

Instructions

  1. Season the chicken thighs with salt, pepper, and Italian seasoning.
  2. Heat a skillet over medium heat and melt 2 tablespoons of butter. Sear the chicken thighs for 2-3 minutes on each side until golden brown.
  3. Transfer the chicken to the crockpot.
  4. In the same skillet, add the remaining tablespoon of butter and sauté the minced garlic for about 1 minute.
  5. Pour in the chicken broth and heavy cream, stirring to combine and allowing it to simmer.
  6. Add the cubed cream cheese and whisk until melted and combined.
  7. Season the sauce with Italian seasoning, salt, and pepper, and add any optional vegetables.
  8. Pour the sauce over the chicken in the crockpot, ensuring it is well coated.
  9. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is fork-tender.
  10. Sprinkle with Parmesan cheese and parsley before serving, with zucchini noodles or cauliflower rice.

Notes

Don’t skip the searing step for added flavor. Experiment with different herbs for variety.
