  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (e.g., penne or fettuccine)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups spinach
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Cook the pasta according to the package instructions. Once al dente, drain well and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken breasts generously with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side until they reach an internal temperature of 165°F. Remove the chicken from the skillet and keep aside.
  3. Add the minced garlic to the same skillet and sauté for about one minute until fragrant.
  4. Toss in the chopped sun-dried tomatoes and cook for another minute to marry the flavors.
  5. Pour in the chicken broth and heavy cream, stirring well to combine. Allow this mixture to gently simmer.
  6. Stir in the spinach and grated Parmesan cheese. Wait for the spinach to wilt and the cheese to melt into the sauce.
  7. Slice the cooked chicken, return it to the skillet, and add the drained pasta. Toss everything together until well coated.
  8. Serve warm, garnished with extra Parmesan if desired.

Notes

For lighter options, substitute heavy cream with half-and-half or Greek yogurt. Add crushed red pepper flakes for spice or extra veggies for nutrients.
