A quick and easy recipe for fluffy egg bites packed with flavor and protein, perfect for breakfast or a snack.

Ingredients

  • 10 eggs
  • 1/2 cup milk or cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped vegetables (bell peppers, tomatoes, onions)
  • 1/2 cup cooked, crumbled bacon or sausage (optional)
  • 1/2 cup chopped turkey (optional)
  • Salt and pepper to taste
  • Non-stick cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spray a muffin tin with non-stick cooking spray.
  3. Chop any vegetables you plan on using. If using bacon, pre-cook it and chop it.
  4. Whisk together the eggs, milk or cream, salt, and pepper in a medium mixing bowl until fully combined.
  5. Place chopped veggies, meat, and cheese into each muffin tin cavity.
  6. Pour or spoon the egg mixture into the muffin tin, filling each cup about 3/4 full.
  7. Stir each muffin cavity gently with a fork.
  8. Bake for about 12-18 minutes, or until set and golden.
  9. Allow to cool for a few minutes, then loosen and remove from the tin.
  10. Serve warm.

Notes

Customize with your favorite vegetables or cheeses. For a lighter version, substitute whole eggs with egg whites.
