Delicious and creamy homemade egg bites that are easy to prepare and versatile for any meal or snack.

Ingredients

  • 10 eggs
  • 1/2 cup milk or cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped vegetables of your choice (e.g., bell peppers, tomatoes, onions)
  • 1/2 cup cooked crumbled bacon or sausage (optional)
  • 1/2 cup chopped turkey (optional)
  • Salt and pepper to taste
  • Non-stick cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Generously spray a muffin tin with non-stick cooking spray to prevent sticking.
  3. Chop your vegetables and pre-cook the bacon or sausage if you’re using it.
  4. In a large bowl, whisk together the eggs, milk or cream, salt, and pepper until the mixture is frothy.
  5. Place your chopped veggies, cheese, and any optional meat into each muffin tin cavity.
  6. Carefully pour the egg mixture over the fillings, filling each cup about 3/4 of the way full.
  7. Gently stir each cavity to mix the ingredients with the egg mixture.
  8. Bake in the preheated oven for 12-18 minutes, or until the egg bites are set and lightly golden on top.
  9. Allow the bites to cool for a few minutes, then gently remove them from the muffin tin.
  10. Serve warm and enjoy!

Notes

Leftovers can be stored in the refrigerator for up to 4 days. Reheat in the microwave for about 30 seconds or enjoy cold.
