Deliciously customizable egg bites that are perfect for breakfast, meal prep, or brunch.

Ingredients

  • 10 eggs
  • 1/2 cup milk or cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped vegetables (bell peppers, tomatoes, onions)
  • 1/2 cup cooked crumbled bacon or sausage (optional)
  • 1/2 cup chopped turkey (optional)
  • Salt and pepper to taste
  • Non-stick cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Generously spray a muffin tin with non-stick cooking spray.
  3. Chop up any vegetables you plan on using. If you’re adding bacon, pre-cook it and chop it into pieces.
  4. In a medium mixing bowl, whisk together the eggs, milk or cream, salt, and pepper until well combined.
  5. Place a handful of chopped veggies, meat, and a sprinkle of cheese into each muffin cavity.
  6. Carefully pour the egg mixture into the muffin tin, filling each cup about three-quarters of the way full.
  7. Gently stir in each muffin cavity for even distribution.
  8. Bake for about 12-18 minutes, or until set and slightly golden.
  9. Allow to cool for a few minutes before removing from the tin. Serve warm.

Notes

For a fluffier texture, beat the eggs well before adding milk or cream. You can add herbs like chives or spinach for extra flavor.
