A comforting dish of fluffy biscuits smothered in spicy chorizo gravy, perfect for breakfast, brunch, or dinner.

  • 10 biscuits
  • 2 (9-ounce) tubes Cacique pork chorizo
  • 1/2 medium white or yellow onion, finely diced
  • 3 tablespoons all-purpose flour
  • 2 1/2 cups whole milk

Instructions

  1. Prepare the biscuits according to the package instructions or your favorite homemade recipe.
  2. Heat a large sauté pan or skillet over medium-high heat.
  3. Add the chorizo to the hot skillet, breaking it apart with a spatula. Cook for about 5 minutes until it’s nicely browned. Then, add the finely diced onion and cook for an additional 2 minutes, stirring occasionally.
  4. Sprinkle the flour over the chorizo mixture and stir well for about a minute. Gradually lower the heat to medium-low and pour in the milk. Allow the mixture to simmer, stirring frequently, for 5-7 minutes until it thickens to your liking.
  5. Generously ladle the chorizo gravy over the warm biscuits and season with salt and pepper to taste. Serve immediately for the best experience.

Store leftovers in an airtight container. Gravy lasts up to 3 days in the fridge; biscuits are best consumed within 1-2 days.
