Biscuits and Gravy Breakfast Casserole

A comforting casserole combining the flavors of biscuits and gravy, perfect for brunch or busy mornings.

  • 1 (16 oz) can refrigerated buttermilk biscuits (8-count)
  • 1 lb breakfast sausage (pork or turkey)
  • 1/4 cup all-purpose flour
  • 2 1/2 cups whole milk (for gravy)
  • 6 large eggs
  • 1/2 cup milk (for eggs)
  • 1 cup shredded cheddar cheese (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Cook the sausage in a large skillet over medium heat until browned and fully cooked.
  3. Sprinkle the flour over the sausage and stir well. Gradually pour in the 2 1/2 cups of milk while stirring continuously. Let it simmer for 5–7 minutes until it thickens. Season with salt and pepper, then remove from heat.
  4. Cut each biscuit into quarters and scatter them across the bottom of the prepared baking dish.
  5. Pour the sausage gravy over the biscuits. In a separate bowl, whisk together the eggs, 1/2 cup of milk, and a pinch of salt and pepper. If using, add the cheese and pour the egg mixture evenly over the casserole.
  6. Bake uncovered for 35–40 minutes or until the eggs are set and the biscuits are cooked through. The top should be golden and bubbly.
  7. Allow the casserole to rest for 5–10 minutes before slicing and serving.

Notes

For a shortcut, consider using pre-cooked sausage for the gravy. Let the casserole sit for a few minutes before serving for easier cutting.
