Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup milk
  • 1 pound breakfast sausage
  • 2 tablespoons all-purpose flour
  • 2 cups milk (for gravy)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Combine the flour, baking powder, and salt in a mixing bowl.
  3. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  4. Gradually stir in the milk until just combined.
  5. Turn the dough onto a floured surface and gently knead it a couple of times.
  6. Roll out the dough to about 1-inch thickness.
  7. Use a biscuit cutter to cut out rounds and place them on a baking sheet.
  8. Bake for 10-12 minutes, or until the biscuits are golden brown.
  9. While the biscuits are baking, cook the breakfast sausage in a skillet over medium heat until browned.
  10. Sprinkle the sausage with the 2 tablespoons of all-purpose flour and stir to coat.
  11. Gradually whisk in 2 cups of milk, cooking until the gravy thickens.
  12. Season the gravy with salt and pepper to taste.
  13. Serve the warm sausage gravy over your freshly baked biscuits.

Notes

For a lighter option, substitute low-fat milk, or use turkey or vegetarian sausage. For added flavor, consider adding shredded cheese to the biscuit dough or spices to the gravy.
