  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. In one mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  3. In a second bowl, mix the buttermilk, egg, melted butter, and vanilla extract together until smooth.
  4. Pour the wet mixture into the dry ingredients. Stir gently until just combined; don’t overmix!
  5. Fill each mini muffin cup about two-thirds full with the batter for even baking.
  6. Bake for 10-12 minutes or until golden brown. A toothpick inserted into the center should come out clean.
