These mini muffins capture the joy of fluffy pancakes in a bite-sized treat perfect for breakfast or a snack.

  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Maple syrup or fruit for serving

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
  2. Whisk together flour, sugar, baking powder, baking soda, and salt in a mixing bowl.
  3. Combine buttermilk, egg, melted butter, and vanilla extract in another bowl until it’s smooth.
  4. Pour the wet ingredients into the dry mixture and stir gently. Be careful not to overmix—small lumps are fine!
  5. Fill each mini muffin cup about two-thirds full with the batter.
  6. Bake for 10-12 minutes, or until the muffins are golden brown and a toothpick inserted comes out clean.
  7. Let them cool slightly before serving warm with maple syrup or fresh fruit.

Notes

Don’t overmix to keep muffins fluffy. Room temperature ingredients help the batter combine better.
